I have a local honey business that focuses on how the honey expresses the teroir of different areas of the desert. The corn that I will be using in the recipe is from my garden and it is a Tohono O Odham variety that orginally was white and I have spent years breeding it to be a blue variety adapted to the low desert of Tucson. I’m currently growing it very close to Mission Garden and it is in the area where the original village of Chuk Shon was located.
